The main reason that eating fat makes you fat simply is that fat contains more calories per gram than any other kind of food. Each gram of fat contains nine calories, while one gram of protein or carbohydrate contains only four calories. Fat is a calorie-dense food, it provides a large number of calories in a small volume. If you eat carbohydrates or protein, especially in whole foods, you can eat more than twice as much without increasing the number of calories.
For example, it is not carbohydrate foods such as bread and potatoes that make you fat, it is the butter or margarine you add. Tufts University Diet And Nutrition Letter described the two studies this way: What it comes down to is that if two men require 2,0000 calories a day each, the one who eats a greater proportion of his 2,000 calories as fat is more likely to end of with body fat than the one who takes in more of his calories as carbohydrate. What is the explanation of this?
Experiments at the University of Massachusetts Medical School show that dietary fat can be turned into body fat so easily the process only uses up 3% of the calories consumed, while it takes 23% of calories consumed to turn carbohydrate into fat stores. In other words, if you consume 100 excess carbohydrate calories, only 77 of them will end up as body fat; but if you consume the same number of calories as fat, 97 will turn up on your body as fat. That is a difference of 25% and, over time, it can add up to many extra pounds of body fat.
The bottom line is, if you want to get and stay lean, reduce your calories slightly while lowering your fat intake so that you consume no more than about 15% in total fat calories. Include about half an hour of mild aerobic exercise and strength training per day in order to lose about one to two pounds of body fat per week. It is not difficult, you can do it!

The Two Main Reasons People Are Overweight and Obese
The staggering statistics are that in 2009 our United States population is more than 60% overweight and more than 30% obese. These figures have increased significantly in the past half century and it appears as though there is no end in immediate sight. I have been trying to figure what the cause of it all may be and came up with a reasonable conclusion and also, based on recent research, what can be done about it. What in the world caused all this overweight and obesity anyway?
I think we can trace the whole situation back to the agricultural revolution about ten thousand years ago when the good old homo sapiens (that is you and me, folks!) turned from being hunter gatherers to being farmers and cattle raisers. They no longer had to walk great distances to find food, gather it from where it was growing, and chase after it with a long spear to conquest it.
Suddenly, because of learning the good old science of agriculture, the food of mankind was right out there in the field or walking around in the corral. People adapted to this way of life with ease and became relatively sedentary after a short period of time. Does this mean that it is human nature to be lazy? Not at all.
It is human nature to want companionship and be accepted by others, just as it is throughout most of the animal kingdom. People saw others adapting to a slow and sedentary lifestyle, enjoying the plentiful supply of food, and copied the behavior of their kind in order to be acceptable. Afterall, what could be easier than being sedentary and enjoying a plentiful food supply? The thinking very well may have been: Well, I want to have friends, therefore I had better do what I see other people doing so that I will be accepted by them. With all this food available right on our farm, nobody is running around hunting and gathering, so I certainly will not do it either!
Today we are still a society wanting to be accepted by others, nothing has changed in that regard. We eat, watch the good old TV, eat some more, and sit around even more. Almost everybody is doing it, it has become an acceptable way of life, and here we are more than 60% overweight! We no longer feel or look like the lean and fit hunter gatherers who searched and chased down their dinner.
We have convenience stores open twenty-four hours a day and cooking channels on TV. Has eating and food become an obsession with so called civilized humans? We also have gyms and exercise studios, both large and small, in nearly every town across the nation. Has fitness and health become an obsession with good old civilized humans? One thing for sure, there is a paradox occurring right before our eyes! The two main reasons people are overweight and obese are:
1) Society itself has adapted to a sedentary lifestyle starting from the agricultural revolution.
2) People want companionship and to be accepted by others and thereby conform to the sedentary lifestyle of their peers.
The point is, overweight and obesity is not healthy and it certainly needs to change. Mankind was created to be lean, fit, and healthy and to live a long, loving, and fruitful life. This is simply common knowledge to all of us.
What changes need to take place in the overweight and obese? They need to create a calorie deficit by eating slightly less and being slightly more active with an emphasis on the word slightly! Crash programs are never good for the mind or body. Losing only one pound of body fat per week may not seem like much, but it is actually fifty-two pounds in a year!
Recent studies have shown that having a clean and healthy colon is most beneficial in accelerating the loss of body fat as well as gaining a new surge of health and vitality. Good advice: Eat intelligently, stay active, and get clean.

Antibiotic-Resistant Disease Affecting People and Swine
The antibiotic-resistant bacteria Extended Spectrum Beta Lactamase (ESBL) is killing both people and swine in Denmark.
The bacteria has been implicated in the deaths of a number of cancer and liver disease patients. The number of infected patients jumped 50 percent last year.
Health officials stated that the bacteria is being transmitted to humans through pigs. The increased use of antibiotics in agriculture may be behind the spread of the resistant strain.
ESBLs are Extended-Spectrum Beta-Lactamases and are actually enzymes produced by certain types of bacteria, which renders the bacteria resistant to the antibiotics commonly used to treat them.
ESPBLs were fist discovered in the mid-1980s. At the time they were mostly found in the Klebsiella species of bacteria, in hospital intensive care units. Until recently, only a few people were affected by this bacteria and it didn’t appear to be cause for concern.
That has now changed. According to the British Health Protection Agency (HRA), a new class of ESBL (called CTX-M enzymes) has emerged, which are now being widely detected among E. Coli bacteria. These ESBL-producing E. Coli are resistant to penicillin and cephalosporin, and are becoming more frequent in urinary tract infections.
Other species of bacteria that can now produce ESBLs include:
K. pneumoniae, K. oxytoca, Salmonella, Proteus mirabilis, Pseudomonas aeruginosa.
The problem appears worse than we think!
According to a study published October 2007 in the Journal of the American Medical Association (JAMA), there were close to 100,000 cases of invasive methicillin-resistant Staphylococcus aureus (MRSA) infections in the United States in 2005, which led to more than 18,600 deaths.
To put that number into perspective, HIV/AIDS killed 17,000 people that year.
This was the study that propelled MRSA into the news last year, combined with a number of school outbreaks that took place around the same time. Discussions focused largely on reducing medical over-use of antibiotics, and proper hygiene such as washing your hands with soap and water to reduce the spread of infectious disease.
But little has been said about the rampant over-use of antibiotics in agriculture, which is a MAJOR source of human antibiotic consumption, and hence increased antibiotic resistance.
Agriculture as a Source of Antibiotic Resistance:
Both MRSA and EXBL are being traced back to animals raised for food production, especially pigs.
These animals are often given antibiotics at low doses for disease prevention and growth promotion. Animals receiving antibiotics in their feed gain 4 to 5 percent more body weight than animals that do not receive antibiotics, but the price is high for you, and the consumer, because this practice also creates the perfect conditions for antibiotic resistance to flourish.
Denmark’s health officials claim they’re unsure of how farmers and veterinarians, who have not consumed infected meat, are becoming infected. However, according to research cited on Johns Hopkins website, the main reservoir of these organisms is in the low digestive tract, and they can persist within the gastrointestinal tract for months. So perhaps the answer does not have to be all that complicated.
So, the meat industry practice of using antibiotics is indeed a driving force behind the development of antibiotic resistance in a now wide variety of bacteria that cause human disease.
The long stalemate on this issue constitutes a struggle between strong science and bad politics. The FDA finally banned the use of fluoroquinolones from agricultural use in August 1997, but not without the Bayer Corporation kicking and screaming in vehement opposition. After all, antibiotics for livestock use is beg business. It constitutes about 70 percent of ALL antibiotic use! They couldn’t replace that market with human consumers even if they tried.
Other Agricultural Sources of Antibiotics:
Another heavily tainted meat product you should stay away from is conventionally raised chicken. A 2006 study published in the Journal of Infectious Diseases found that bacteria from conventional chicken and from people who ate the chicken became resistant to Synercid, a strong antibiotic used to treat antibiotic-resistant bacteria. In essence, it can cause resistance to the last lines of defense currently available in the modern medicine cabinet.
It also found that it was rate to find resistant bacteria among antibiotic-free chicken, while the majority of bacterial isolates from conventional poultry were resistant.
But, the ramifications of using antibiotics in agriculture don’t end there. Antibiotics filter down through the food chain in sometimes non-suspected ways.
Antibiotics are also being transferred, via manure, into your food supply.
A 2007 study in the Journal of Environmental Quality looked a whether food crops will accumulate antibiotics from soil covered with antibiotic-containing manure.
In a greenhouse setting, corn lettuce and potatoes were grown on soil that contained hog manure with a commonly used veterinary antibiotic added.
The antibiotics were absorbed by all three crops, into both their leaves and tissue. Meanwhile, the antibiotics also transferred to the potato tubers, suggesting that root crops like carrots, radishes and potatoes may be particularly at risk of antibiotic accumulation.
These finding unfortunately also have implications for organic farmers, who often use manure as their main source of fertilizer. And, as it stands, manure that contains antibiotics is still allowed under the organic label.
How to Avoid Excessive Antibiotic Exposure
So how can you ensure that the food you feed to yourself and family is pure and healthy?
Apart from growing it yourself, you best option is to get to know a local farmer near you, one who uses non-toxic farming methods. If you live in an urban area, there are increasing numbers of community-supported agriculture programs available that give you access to healthy, locally grown foods even if you live in the heart of the city.
If you are looking for a safer alternative to commercially raised beef please be sure to check out grass-fed beef. Grass-fed cattle are not routinely fed antibiotics. They may occasionally receive them for an infection, but that would be the rate exception, and even then they are only used for a few days.
